You can, of course, make this with regular green Swiss chard, but it seems so much cheerier with some brightly coloured stalks in the mix. It is pretty much a meal in itself, but you can take it to another level if you serve it with some roast potatoes or fat wedges of roast squash on the side. If you want to make it a bit richer, stir in a few tablespoons of vegan crème fraîche.
