TO STERILISE your jars, wash them well in warm soapy water, rinse, then dry completely in a low oven (about 120°C/fan 100°C/gas ½), upside down on a clean baking tray. Make sure the utensils you use are spotless, too.
WHEN BLITZING or blending, don’t overwork the machine – blitz for no longer than 1 min at a time before waiting a few moments for the motor to cool.
