• 1 large fresh strawberry, rinsed and hulled
• 25ml/1fl oz simple sugar syrup
• 2 tbsp Eden Mill Love Gin, or similar rose-forward, floral pink gin
• 2 tsp freshly squeezed lemon juice
• Ice cubes
• About 75ml/3fl oz well-chilled sparkling pale rosé wine
• Edible rose petal, to garnish
1. Put the strawberry and sugar syrup in a cocktail shaker and lightly crush. Add the gin and lemon juice and a handful of ice cubes and shake.
2. Strain into an ice-filled rocks glass and slowly top up with the sparkling wine. Garnish with the rose petal and serve immediately.
