As we write our welcome to you this month, we’re still very much in lockdown. But as things can change quickly,who knows what the situation will be as you read this?! One thing we do hope is that you’re all staying safe, healthy, and in as good spirits as possible.
Here at VFL, we try to look for at least one positive in every situation. What we've decided we can take from this global pandemic is the way it made us all slow down for a while, take stock of what's important, and cherish the simple things in life. Who else has become more enthusiastic about going for a daily walk than ever before? And we love stopping for a few minutes, taking a couple of deep breaths and listening to the birds chirping (is it just us, or do there seem to be more of them now?).
So this issue of VFL we've dedicated to keeping things simple in the kitchen. We're celebrating stir-fries you can cook up in 15 minutes (p48), or dinners that come together in under 30 minutes (p50), when the kids are particularly restless or you just don't quite have the energy to slave over a hot stove for longer than that. Don't worry, we all have those days. Plus we've got a selection of recipes you can cook for under £1 (p40) – particularly useful for the end of the month when the budget gets tight – as well as recipes that require less than fi ve ingredients (p62).
As Simply Vegan sadly published for the last time in April, this issue we're embracing it within the pages of VFL – look out for popular regulars such as the 7-day meal plan (p25) and the vegan fashion buys (p112). We hope this issue helps to give you a little light relief and entertainment and we'll see you next month!
