Curry in a hurry
PREP AND COOK TIME 30 MIN SERVES 6
INGREDIENTS
✻ 1 tbsp sunflower oil
✻ 3 large chicken breasts, sliced
✻ 1 sweet potato, peeled and cubed
✻ 1 pointed red pepper, deseeded and sliced
✻ 3 tbsp Thai green curry paste
✻ 200ml chicken stock
✻ 400g can coconut milk
✻ 155g pack mangetout
✻ 130g pack baby corn
✻ 2 spring onions, sliced
✻ Rice, to serve
1 Heat the sunflower oil in a pan or wok and cook the sliced chicken breast, sweet potato cubes and chopped pepper for 3 minutes. Stir in the Thai green curry paste.
2 Pour in the stock and the coconut milk and simmer for 15 minutes. Add the corn and mangetout and cook for 2 minutes more. Top with spring onions and serve with rice.
