As you turn onto the corner of Alma Road — the home of vegan food van The Spotless Leopard — you can‘t help but notice the smell of freshly baked cakes mingled in with the autumn leaves or warm summer air. Louise, the van‘s owner, pulls up early to make a start on the tahini, peanut butter, chocolate or whatever kind of cake will be on the menu today. The common ingredient: vegan-friendly food.
Being space for only two of us at a time in the van, we begin by whipping up wholesome, hearty favourites with an embarrassingly selfsatisfied sense of organisation. It really helps when cooking in such a small space if your heart flutters at the idea of a meticulously clean and tidy kitchen.
