SMOKY AUBERGINE - RINGAN NO ODO
Sometimes the best recipes are discovered between two friends who share the love of food and cooking. This particular recipe (known in Punjabi as baingan bharta, similar to Gujarat ringan no odo) was sent to me by a special friend via text after we discussed it at length, but she provided no quantities or instructions, only a list of ingredients. The next day, I made it myself and changed a few elements and now I love it even more! Trying this out myself boosted my confidence in the kitchen and made me realise that learning by my senses taught me to be a better cook. I hope you enjoy it as much as I do.
