Tramezzini with ham-herb spread
1 Blend together 400g cream cheese, 50g basil, 2 tbsp hot water, 2 tbsp olive oil, and seasoning in a food processor.
2 Spread the cream cheese on slices of tramezzino bread and top with slivers of parma ham, folding as needed.
3 Roll up the slices of bread and arrange on a platter lined with greaseproof paper. Garnish with 50g parsley and 50g mint leaves.

INGREDIENTS:
✱ 300g gold cherry tomatoes, halved ✱ 300g cherry tomatoes, halved ✱ 2 green heirloom tomatoes, sliced ✱ 2 tbsp white balsamic vinegar ✱ 2 tbsp extra-virgin olive oil ✱ 450g of halloumi, sliced Q✱50g basil leaves, washed ✱ 25g purple basil leaves, washed ✱ 3 tbsp olive oil ✱ salt and pepper
METHOD:
1 Toss together the tomatoes, balsamic vinegar, extravirgin olive oil, and seasoning in a mixing bowl. Cover and leave to stand at room temperature for about 15 minutes.
