If your lockdowns and lengthy periods of isolation have been anything like mine, you have probably spent more time than usual in the kitchen discovering new culinary skills and revisiting old recipes that haven’t been utilised for a while.
Even though the 2020/21 pandemic came at a time in history when we enjoy more vegan food choices in shops and stores than ever before, we just haven’t been able to access them as easily as we would like. Restaurants with menus overflowing with plant-based options opened briefly but mostly we have been left to our own devices when it comes to throwing together a special vegan meal.
