Much about the fennel bulb is polarising, from its knobbly handlike shape and crunchy texture to its liquorice flavour. However, this has not hindered the plant’s widespread popularity: in India, fennel seeds are consumed as a breath freshener after eating; the leaves are added to omelettes in Lebanese and Syrian cooking; while the sliced bulb is a key player in German and Indian salads.
