We have all been told that breakfast is the most important meal of the day, so we say why not go to town on it?

Blueberry and banana crumpets

Serves 4 | Prep 15 mins plus proving |

Cook 15 mins | Calories 632 (per serving)

FOR THE CRUMPETS

300g (10½oz) gluten-free bread flour, or gluten-free plain flour mix

1½ tsp active dry yeast

½ tsp xanthan gum

½ tsp bicarbonate of soda

1 tsp salt

½ tsp caster sugar

750ml (26fl oz) lukewarm milk sunflower oil, for frying butter, to serve

TO SERVE

orange marmalade

2 large bananas, peeled, sliced

2-3 tbsp walnuts, chopped whipped cream a handful of blueberries finely grated zest of 1 orange

1 For the crumpets: Stir together the flour, yeast, xanthan gum, bicarbonate of soda, salt and sugar in a large mixing bowl.

2 Add the milk, stirring well to make a thick batter. Cover the bowl with clingfilm and let rest in a warm place for 3 hours.

3 When ready to cook, rub a large frying pan with 1 tbsp sunflower oil, preheating it over a medium-moderate heat until hot. Rub four crumpet rings with some more sunflower oil.

4 When the pan is hot, place the rings in it. Place large spoonfuls of the batter into each ring.

5 Cook over a low heat until small bubbles form on top and the bases are golden-brown, about 8-10 minutes.

6 Flip the crumpets over and cook for 1 minute before removing from the pan. Repeat steps 3-6 for the remaining crumpets.

7 When ready to serve, spread the crumpets with orange marmalade. Stack them on plates, interspersed with banana slices and walnuts.

8 Garnish with whipped cream, blueberries and orange zest.
