THE DUKE OF CAMBRIDGE & NOUR DAKOBA’S SPAGHETTI BOLOGNESE (RAGU)

Nour Dakoba had Prince William chopping carrots on his last visit to The Passage to make a mean version of this Italian classic.
INGREDIENTS
• 3 tbsp olive oil
• 30g/1¼oz butter
• 1 large onion, peeled and finely chopped
• 1 carrot, scrubbed and chopped
• 2 sticks of celery, chopped
• 350g/12oz best-quality lean beef mince
• 250ml/9fl oz dry white wine
• 120ml/4¼fl oz milk
• A pinch of freshly ground nutmeg
• 1 x 400g tin chopped tomatoes
• 1 tsp tomato purée
• Salt and freshly ground black pepper
