Here, hello! talks exclusively to Lucy and Josh to find out more about their exciting venture, starting with why they have TV chef Jamie Oliver to thank for bringing them together…
How did you meet?
Lucy: “We actually met waiting tables at Jamie Oliver’s first Jamie’s Italian in Oxford ten years ago. The concept of Jamie’s was amazing and they created dishes using some of the best ingredients and produce around. We were taught so much about the provenance of food and why quality was so important. Us ’90s kids were brought up on potato waffles and turkey dinosaurs, so it really opened up our minds.
“Having really enjoyed our experience there and our joint love of food, when we were 24 we decided to start a street-food business. With about £1,000 each in our pockets, we moved down to London, went to every street-food market there was and planned our first move.
