FRITTATA MUFFINS WITH BROCCOLI &
SWEETCORN
Makes 6 Preparation time 15-20 minutes Cooking time 20-25 minutes
INGREDIENTS
• Butter, for greasing
• 100g/4oz broccoli florets
• 3 large British Lion eggs
• 2 tbsp milk
• 4 tbsp tinned sweetcorn, drained
• 50g/2oz cheddar or Gruyère cheese, grated
• 4 spring onions, trimmed and sliced
1. Preheat the oven to 180°C, 350°F, Gas 4 and lightly grease 6 holes in a non-stick muffin tin.
