As somebody who had always claimed a faux allergy to most green foods, making the leap from meat eater to vegan in 2015 prompted understandable looks of shock and surprise on the faces of family members. I can still remember the comment from one friend, exclaiming: “What next?! Are you only going to eat raw food?” Well, no, not quite. But as my eagerness to eat more healthily grew and my love for vegetables increased, the alien concept of eating raw food has become all the more normal and I now love opting for the raw options on menus when eating out or knocking up a fresh, crunchy, raw salad as soon as the summer sun hits.
