Soups to make you smile

Embrace autumn with open arms by making some hearty, warming soups that will raise your spirits and comfort your soul

The seasons are shifting, the evenings are lengthening and comfort food is calling. LEON, the home of naturally fast food, has created over 100 delicious, nourishing soups featured in the new book LEON Happy Soups by Rebecca Seal and John Vincent (Conran Octopus, £15.99). Chapters include ‘Comforting’, ‘Naturally fast’, ‘Bright and fresh’, and ‘Posh’, as well as ideas for toppings and side dishes.

The ethos behind LEON has always been about making it easy to eat well. And this book contains plenty of ideas to make luscious soups which, in their words are, ‘Magic potions. Potions full of love, full of power. Oh, and full of flavour. That is how we see soups at LEON. The stirring of the crucible, the sipping of the broth. What better way to show you love yourself? Now, go and make some magic.’

We love the simplicity of one-pot cooking, and a comforting marriage of warm spice with the freshest ingredients.

This is inspired by meen moilee, a Keralan fish curry. Frying the fish gives it an inviting texture, and be sure to use full-fat coconut milk, which won’t curdle. Vegetarians can use par-boiled sweet potatoes, greens or cooked chickpeas.
