“Roasted aubergines marinated in a sweet and spicy miso sauce and served with fresh chillies and spring onions are the perfect quick snack or side dish for a big get-together. You can also cook the aubergines under the grill or in a griddle pan: brush both sides with the marinade, then cook for 10 minutes, turning once.”

Londoner and music-lover Rachel Ama is a relative newcomer to the vegan life, but through her popular YouTube channel, launched in 2017, she’s inspired legions of fans to cook good-for-you, great-tasting vegan recipes (as well as passing on a few dance moves!). This is Rachel’s first cookbook – but not, we suspect, her last.
