Sticky peaches with cheesecake cream



◯ 2½tbsp runny honey

◯ 2tsp lemon juice

◯ ½tsp ground cinnamon, plus extra to sprinkle

◯ 1tsp vanilla bean paste

◯ 4 large firm ripe peaches, halved and stones removed

◯ 100g lightest soft cheese

◯ 2tbsp skimmed milk

◯ 20g crystallised ginger, finely chopped, to serve

1 Heat the oven to 190ºC/fan 170°C/ gas 5. Combine 2tbsp of the honey with the lemon juice, cinnamon and vanilla bean paste in an ovenproof baking dish. Add the peaches and turn until they’re coated in the honey mixture, then arrange them so they’re cut-side up. Bake for 15 min or until tender.
