CAULIFLOWER JALAPENO
Serves 4 as a starter or side-dish Takes 35-40 minutes
This vibrant vegetarian dish has long been a staple on the menu at Nobu’s original London restaurant.
INGREDIENTS
• 3 heads of cauliflower (use a combination of white, purple and yellow if in season and available)
• 1 head of romanesco
• Olive oil
• Honey
• 2 tbsp finely chopped jalapeño
• 2 tbsp finely chopped red onion
• 2 tsp pine nuts
• A handful of fresh coriander

dressing
• 50g/2oz fresh jalapeño, roughly chopped
• 1 tbsp sea salt
• 100m/4fl oz rice wine vinegar
• Freshly ground black pepper
• 120m /41/4fl oz grapeseed oil
