“Bao are Asia’s answer to the burger. These pillowy-soft steamed rolls are the best kind of street-food snack, yet they lend themselves to home cooking too. Fill them with your favourite ingredients, from pork belly to jackfruit. This combination is one of my favourites – tender, slow-cooked spiced beef brisket and fresh, crunchy pickles.”

BIT ABOUT FRANK
Brought up in the UK, he was inspired by his Hong Kongborn dad Joe, who ran a Chinese restaurant. From a young age, Frank’s passion was to work in food, and after doing a job in the City, he returned to his roots. He now splits his time between the buzzing London restaurants Mr Bao in Peckham and – named in honour of his father – Daddy Bao in Tooting, both of which aim to bring traditional Asian cuisine to the mainstream.
