Most of the large lower sprouts will have been picked and used at this point, but don’t ignore the smaller ones higher up the stem. These may be a little more fiddly to prepare, but they are one of the sweet treats of the winter season. Most Brussels sprout plants are hardy and don’t suffer if exposed to frost and snow. Some late-cropping varieties can produce good sprouts right through to March.
One of my favourite varieties is ‘Nautic’. This does well in raised beds as well as on the flat; it swells large sprouts for use from October to December and there are plenty of firm small ones to use after that.
