For the terrine:
• 3 large red or yellow peppers, deseeded and halved
• 2 large aubergines
• 6 large, ripe tomatoes
• 3 large courgettes
• 100g (heaped 3 cups) baby spinach
• 60ml (¼ cup) extra virgin olive oil
