Give it the full beans with recipes based on the terrific variety of pulses

White bean, coconut and roast pepper stew

By Niki Webster from Rebel Recipes (www.rebelrecipes.com) Serves2-4| Prep20 mins| Cook40 mins| Calories490(per serving)

2 organic red peppers, chopped roughly

2 handfuls of cherry tomatoes

3 tbsp olive oil

2 onions, chopped roughly

4 garlic clove, sliced

5 large organic tomatoes or 20 cherry tomatoes, sliced

230ml (8floz) water

1 tin of organic cannellini beans, drained

1 tin of organic butter beans, drained

1 tin of organic haricot beans, drained

1 tsp sea salt

black pepper

juice of ¼ of a lemon

1-2 tbsp coconut yoghurt or coconut cream

a handful of fresh thyme

a pinch of chilli flakes

1 Preheat the oven to 180°C/Gas Mark 4. Add the peppers and cherry tomatoes to a large baking tray and toss them in 1 tbsp olive oil. Bake for 30 minutes or until soft and browning a little.

2 Add the remaining olive oil to a large pan and add in the onion. Fry on a low-medium heat until soft and slightly browning, about 10 minutes. Add in the garlic and cook for a few minutes more.

3 Add the fresh tomatoes, stir, turn the heat to low, cover and cook for about 5 minutes.

4 Add in the roast peppers, water, beans and a little fresh thyme. Cover and simmer for 20 minutes.

5 Finally, season with salt, pepper, lemon juice and more fresh thyme. Stir in the coconut yoghurt and sprinkle with chilli flakes. Top with the roast tomatoes.
