Breakfast of champions

BUTTER BEAN PANCAKES WITH FRESH STRAWBERRIES
Serves 4|| Prep 15 mins + resting|| Cooking 20 mins
• 400g tin butter beans, drained and rinsed
• 2 eggs
• 2 tablespoons clear honey
• 2 teaspoons vanilla extract
• 150g self-raising flour, sifted
• 150ml skimmed milk
• Cooking oil spray
• 200g 0% fat natural Greek yogurt
• 200g strawberries, hulled and diced
1 Put the beans and 4 tablespoons of water in a food processor and blitz until completely smooth. Add the eggs, 1 tablespoon of the honey and the vanilla extract, and blitz again until completely combined. Transfer the mixture to a large bowl and add the flour. Gradually add the milk, whisking, until you have a smooth batter. Cover and set aside for 15 minutes.
