Select medium-thickness stems so thinner ones can develop
Rhubarb plants should now be in full growth, responding to warmer temperatures and longer days, so make the most of this moment by taking regular pickings of the fresh young spring stems.
Also remove some of the older stems with the biggest, toughest leaves. This encourages fresh replacements and lets in more light. Pull a stem away by holding it firmly near the crown and twisting it so that it comes away cleanly. Prepare the harvest by twisting off and discarding the leaves.
