APPLE & CINNAMON CAKE
Serves 10 Preparation time 12 minutes Cooking time 45 minutes
INGREDIENTS
• Olive oil spread, for greasing
• 200g/7oz plain flour
• 1 tsp baking powder
• 1½ tsp ground cinnamon
• ½ tsp ground nutmeg
• 75ml/3 fl oz rapeseed oil
• 100g/4oz golden caster sugar
• 150ml/¼pt nut milk of your choice
• 2 tsp vanilla extract
• 1 tbsp apple cider vinegar
• 2 Gala apples, cored, each one sliced into 6 wedges
• Icing sugar (optional)
1. Preheat the oven to 180°C, 350°F, Gas 4. Line the base of a 22cm/8½in round cake tin with baking paper and grease the sides.
2. Sift the flour, baking powder, cinnamon and nutmeg into a mixing bowl and stir to combine.
3. In a jug, mix together the rapeseed oil and golden caster sugar. Add the nut milk along with the vanilla extract and apple cider vinegar. Stir to mix well.
