CARROT CAKE ENERGY BALLS

INGREDIENTS
• 100g/4oz pecans
• 125g/4½oz soft dates
• 200g/7oz carrots, grated
• 80g/3oz desiccated coconut
• ¾ tsp ground cinnamon
• ¾ tsp ground ginger
• 100g/4oz raisins
• 50g/2oz oats
• 2 tbsp vegetable oil
1. Measure all the ingredients into a food processor and whizz until finely chopped. Using damp hands, shape into 30 equal-size balls.
2. Place on a plate and chill for 1 hour in the fridge until firm.
