Strawberries and cream is the traditional doubles pairing during Wimbledon fortnight, so here we serve up some smash hits with a twist on the classic flavour duo
JUICY WATERMELON & STRAWBERRY POPS
Makes 8-10 Takes 20 minutes, plus infusing and freezing
All you need is a splash of vodka here and you’d have the perfect frozen daiquiri. But hey, who needs alcohol when you can enjoy this healthier fruit version in the form of a vibrant lolly?
INGREDIENTS
• 300g/11oz strawberries, rinsed, hulled and halved
• 3 tbsp icing sugar, sifted
• 500g/1lb 2oz watermelon
• Freshly squeezed juice of 1 lemon
1. In a bowl, stir together the strawberries and sugar and leave for 1 hour for the strawberries to release their juices, stirring occasionally.
2. Meanwhile, cut away the watermelon rind and deseed and roughly dice the flesh.
3. Place the strawberries and all the juices, the watermelon and the lemon juice in a blender and blend until smooth. Divide the mixture between 8-10 small ice lolly moulds. Add lolly sticks in an upright position at this stage or freeze first for a while until the mixture is firm enough to hold the sticks straight. Freeze for 4-6 hours until solid.
