Multi-tasking within iPadOS has gotten more complex over time and truth be told it has been a bit of a battle for Apple. The operating system is more like iOS than macOS, but the hardware is powerful enough to allow multiple apps to run at the same time, so many users want better linking between their most used apps. One trick that is extremely useful is the ability to drag emails to other apps such as Apple Notes and Reminders, but it is not as seamless to use as what you may be used to in other parts of the system. It requires a little bit of practice to get the technique right, but once you have it worked out you should be able to do it every time without any issues.
