This is the time of year when experts start to predict what we’ll be eating more of over the coming 12 months. And for regular healthy readers, it’s good - if not surprising - news. As a result of our various lockdowns, shopping locally and home cooking have both become trends with staying power. Thanks to this better knowledge of what goes into our food, plus our increased awareness of climate change, plant-based eating is also set to continue to grow in popularity - though in a balanced flexitarian way, rather than a strict vegan approach. We also love the prediction that the humble chickpea is set to be this year’s star ingredient. Protein-packed, with a lovely creamy flavour and texture, chickpeas are no longer just about houmous. In 2021, we’ll be enjoying them ground down as flour, crackers, crisps, crispbreads and more. What’s not to love?
