Gglobe artichokes are one of the most abundant vegetables in Italy, grown in almost all 20 of the country’s regions and boasting a number of different varieties. Although fresh ones are arguably the pinnacle of artichoke enjoyment, it is not a widely available vegetable in the UK (unless you grow them yourself), but there is a good selection of preserved supermarket and deli artichokes. These shop-bought artichokes are preserved in jars and complemented by various flavours, from fine herbs and chilli to garlic, and are great store cupboard standbys.
Artichokes work especially well in antipasti and although this is partly down to their subtle, earthy flavour, there is another reason. Artichokes contain a substance called cynarin, which contains properties that modify your tastebud reactions, which means most foods eaten after artichokes can taste sweeter as a result. Also, as an aid to digestion, try a tot of Cynar – this bittersweet artichoke liqueur is an acquired taste, but worth seeking out!
