White Chocolate Rocky Road

Emma of Forever Baking blog finds inspiration in Good Food magazine for her latest bake: Cranberry and Strawberry White Chocolate Rocky Road!
Good Food is an excellent monthly magazine, which not only gives you lots of great recipes, but also reviews produce of the month, whats going on in the food world, new foods, new chefs and much much more. The recipes are often beautiful with varying levels of difficulty which are always outlined, inaddition to photographs to salivate over and a very well laid out method. This magazine is a must for everyone who enjoys food!
While flicking though the digital August issue on Pocketmags, I came across the ‘Tropical Rocky Road’ and was inspired to create my own Rocky Road with a twist! Let me introduce my ‘Cranberry and Strawberry White Chocolate Rocky Road’.
This recipe is quick easy and simple to make. Perfect for when you need to knock up an impressive dessert for parties.
Ingredients:
800g white chocolate
150g dried cranberries
100g dried apple, cut into small chunks
150g freeze-dried strawberries and raspberries
200g white marshmallows
Firstly very lightly butter a 20x30cm baking pan and line it with foil.
Place the chocolate in a heatproof bowl over a saucepan of barely simmering water – do not let the bottom of the bowl touch the water – and cook until chocolate is melted and smooth.
Remove from the heat, add the marshmallow, dried apples and cranberries and stir until well combined.
Pour mixture into prepared pan and smooth the top. Sprinkle with the dried strawberries and raspberries.
Set aside until firm (2-3 hours). Cut into pieces and serve.
