Some people might avoid garlic for its obvious and not-so-pleasant effect on the breath, but what is it that makes garlic such a major player when it comes to our health? Its potent smell is largely due to the release of a pungent sulphur compound called allicin, that is found in the cloves of the garlic plant. Garlic’s distinct flavour and scent, as well as its biological benefits, are freed when the cloves are crushed, or indeed chewed.
