Herby mushrooms on toast: fry sliced mushrooms in low-calorie cooking spray until golden. Remove from the heat, stir in fat-free natural fromage frais and chopped fresh chives, then pile onto 2 slices wholemeal toast from a small 400g loaf (a Healthy Extra)
Lunch
Tuna jacket: microwave a pricked large sweet potato until soft, then split in half. Mix drained, flaked canned tuna in spring water, finely chopped red onion and a squeeze of lime juice and use to fill the potato. Top with a dollop of fat-free natural Greek-style yogurt and a little paprika. Serve with rocket
