Venison Stroganoff
By Thomas Wilson
Some foods feed the body; others nourish the soul. In my experience, most foods in the soul-nourishing category include pasta, cream, wine, or venison. My very favorite dish includes all four. Stroganoff has been part of my family for at least three generations. My mom didn’t make it often, because it isn’t the easiest dish, taking about an hour-anda-half from start to dig-in. When she did, it was an instant special occasion. I remember many evenings, coming home after a long hunt, a tough cross-country practice, or just a hard day at school, smelling that magical combination of sour cream, browned meat, tomato, onion, and mushrooms, and knowing that my day was about to get a whole lot better.
