GREEN GOODNESS
It’s coughs and colds season, but keeping our gut healthy will help to ward off winter bugs. Here we share some mouthwatering watercress dishes packed full of ingredients to help keep your gut in tip-top shape
SUPERGREEN RISOTTO WITH BROCCOLI, BEANS & WATERCRESS
Serves 4 Takes 35 minutes
INGREDIENTS
• 750ml/25fl oz vegetable stock
• Olive oil
• 1 onion, peeled and chopped
• 1 tbsp chopped fresh thyme
• 100g/4oz green beans, chopped on the slant
• 300g/11oz risotto rice
• 1 head of broccoli, chopped finely
• Salt and freshly ground black pepper
• 80g/3½oz watercress, chopped
• 40g/1½oz Parmesan, grated (omit if vegan)
1. Add the vegetable stock to a saucepan and keep on a gentle simmer. In a separate large pan, fry the onion in plenty of olive oil until soft. Add the thyme and green beans, allowing to soften a little before adding the risotto rice – this should absorb any moisture in the pan.
