Fresh tomato soup
COOK AND PREP TIME 25 MINS
SERVES 4
INGREDIENTS
* 1 tbsp olive oil * 1 medium onion, peeled and finely chopped * 1 pot fresh basil * 2 garlic cloves, finely chopped * 1kg plum tomatoes, roughly chopped * 1 tbsp balsamic vinegar * salt and black pepper
METHOD
1 Heat the tablespoon of olive oil in a large pan. Add the chopped onion and cook gently on a low heat until soft and golden.
2 Meanwhile, snip the basil from the pot just above the soil, or use a pre-packaged sprig of basil instead. Remove the leaves and chop the stalks very finely. Place a few leaves aside to garnish with later, then roughly chop the rest.
