Having the appearance of a thin parsnip, salsify is a root vegetable that tastes a little like oysters, so no surprise that it is sometimes referred to as ‘vegetable oyster’. It has a light brown skin with creamy white flesh within. It is a good crop for harvesting mid-autumn to midspring when other growing options are limited.
