Secret Recipes (of an Olympic Sculler)

British sculler Vicky Thornley won Olympic silver in the W2x in Rio before winning a world championship silver in the single in Sarasota last year. Here Vicky shares with Row360 some of her favourite recipes currently fuelling her training in the quest for Tokyo gold.

Original homemade granola

Vicky: The majority of shop bought granolas are expensive and have a high sugar content. However, with homemade granola you can control how much sweetener you add and you can also experiment with the ingredients. This recipe is a basic one but you can add different grains (puffed quinoa, puffed buckwheat, spelt flakes, rye flakes), different nuts and seeds (brazil nuts, chia seeds, flax seeds) and vary the dried fruit (coconut shavings go really well). This is great to have in the cupboard for breakfast or a quick snack containing carbohydrates, protein and healthy fats.

Fills about a 1½ litre food jar

Prep: 5 mins

Cooking: 45-50 mins

Ingredients

400g rolled oats

80g almonds

50g pecans

50g hazelnuts

60g mixed seeds

3 tbsp coconut oil

7 tbsp maple syrup

Dried fruit of choice (I like sultanas and raisins)

Method

Mix together all ingredients apart from dried fruit ensuring the coconut oil is in liquid form. Bake for 40-45 mins at 160 degrees fan or until lightly toasted and golden. Mix a couple of times during baking to ensure even cooking. Allow to cool and then mix in the dried fruit.
