SUMMER SQUASH GREEN CURRY WITH TOFU
If you’ve got a medley of summer squash to choose from – little baby courgettes (zucchini) and yellow squash, any of the round summer squash or pattypan varieties – this is a great way to use them up. Just cut everything into roughly the same thickness to allow it to cook evenly. This brightly flavoured dish speaks of summer, but given our easy year-round access to summer squash, it’s just as welcome a dish during cold months when you crave a flash of warm sunshine. It’s a full meal served with some steamed rice or other grains on the side.
