MAKES ABOUT 36

TO DECORATE

1 x 23x32cm (9x13in) cake • ¼-2/3 cup buttercream • 225g (8oz) white candy melts • 72 white chocolate chips • 225g (8oz) orange candy melts • 225g (8oz) grey candy melts • orange and black oil-based candy colours • decorating icing in black and pink, fitted with small round nozzles

EQUIPMENT

• 36 lollipop sticks • styrofoam block

1 Cut off the browned edges of the cake, then cut the cake into four pieces. Put the pieces into the bowl of a stand mixer fitted with the paddle attachment and beat on low speed to break the cake into fine crumbs, about 3 minutes. Add the frosting, 1 tbsp at a time, until the mixture is moist enough to hold its shape when compacted. Scoop out 1½ tbsp-sized portions and roll each one into an oval shape. Place the ovals on a baking paper-lined baking sheet.

2 In a microwave-safe bowl or tall glass, microwave the white candy melts in 20-second intervals, stirring after each interval, until melted.

3 Dip 1cm (½in) of the ends of the lollipop sticks into the melted white candy coating and insert them into the cake ovals. Return the cake pops to the baking sheet (do not attempt to stand them up straight at this point). Let them set completely, 10 minutes.

4 Dip the bottoms of the chocolate chips in the melted white candy coating and place one on each side of the ovals for ears. Insert the pop sticks into a styrofoam block. Let them set completely.

5 In separate microwave-safe bowls or tall glasses, microwave the orange and grey candy melts in 20-second intervals, stirring after each interval, until melted.

CAKE POP BASICS

1. Trim the edges & browning off the cake. 2. Place your cake cubes into the bowl of a stand mixer.

3. Add frosting to the crumbled cake. 4. Roll into cake balls 5. Dip the cake pops. 6. Decorate and enjoy.

6 Working with one at a time, dip the cake pops into the desired colours of melted candy coating and gently turn to coat them (but do not stir). Tap your wrist over the bowl to remove the excess coating, then insert the sticks in a styrofoam block. Let them set completely, 10 minutes.
