I used to watch my dad cook when I was younger. Lots of my inspiration has come from him. Now I am older I think about dishes from my childhood and I make them as an adult. Some of them I adapt to make them more ‘grown up’ – I might add wine or other flavours. My dad used to make a mushroom dish with white wine that I’ve adapted and is probably one of my favourite meals now. I have become more creative since I started recreating some of my favourite dishes.
