We catch up with Chloe Coscarelli, the plant-based chef and entrepreneur using her food to spread the vegan message

Since 2004 when she first turned vegan, Chloe Coscarelli has been on the front line of the vegan food revolution. The passionate chef has been leading the way, with four cookbooks under her belt, numerous appearances on cooking shows, and having run several successful food pop-ups. We chat to the vegan powerhouse about her favourite things to bake, and how she has seen the scene blossom.
When did you fall in love with cooking?
In college, I was notorious for throwing elaborate parties that revolved around food. Whether it was brunches, birthdays, or just a Tuesday night, you could find me in my tiny kitchen whipping up tofu scrambles, tiered cakes, or frying veggies for a tempura party. I loved watching my roommates and friend’s faces light up after the first bite, and I just knew that cooking was what I was meant to do!
