The first time I made these macaroons was on live television — the producer of the show wanted me to create a no-waste winter holiday recipe. In the moment, I decided to find a way to make a simple and delicious treat from food that would otherwise have been wasted. This coconutty and chocolatey goodness is made with aquafaba — the liquid left over from soaking chickpeas, or the liquid from a can of them. Chickpea liquid is a baker’s gold.
