Pulse 2 slices of bread into coarse crumbs in a food processor. Add 2 crushed garlic cloves and pulse again. Stir in chopped parsley and lemon zest, then fry in olive oil until golden. Sprinkle over pasta for a zingy finish.
BRUNCHTIME EGGY BREAD
Whisk 2 medium free-range eggs in a shallow dish, then dip in 4 slices of bread to coat. Heat a knob of butter in a frying pan and fry each slice until golden. Top with winter berry compote, then serve sprinkled with icing sugar and ground cinnamon.
