HOW TO… Make butter-enriched dough
The babka buns are made with a dough similar to one you’d use to make a brioche, where lots of butter is incorporated to enrich it
WHAT’S THE BENEFIT? An enriched dough gives the bake a pillowy texture that’s more like a cake.
HOW TO MAKE IT It’s easiest if you use a stand mixer fitted with the dough hook attachment, but you can knead in the butter by hand – it will take a long time and a fair bit of elbow grease, though.
