In 1971, the then mysterious green paste made its way from Liguria to Britain's Italian delis, but it wasn't until September 1991 that pesto hit the big time when Sacla' Basil Pesto went on sale in Sainsbury's, Waitrose and Safeway. Suddenly a generation of cooks were introduced to the pleasures of the Italian table. It changed the way we eat.
