Cookbook author Miguel Barclay explains how to make the most of canned and frozen foods
I like really relaxed recipes – something that people are actually going to cook at home – so I set myself a challenge to make £1 meals. I planned one-pan meals by using spreadsheets to itemise every ingredient I needed, researching on websites to find out how much a meal would cost. Then, I’d buy them on the way home from work and make a £1 meal in the evening.
