In deference to its name, any tiramisu I make must always contain coffee. The Italian Tira (pull) mi (me) su (on) loosely translates to ‘pick me up’, so unless it’s spiked with one of those godawful caffeine drinks, it must have the coffee. But that isn’t to say it need be cof fee alone. Many flavours are well suited to the bitter tang of cof fee – perhaps surprisingly, passion fruit is one of the best.

While rocky road needs, obviously, to have a good crunch to it, it’s important that we don’t neglect chewiness and fruitiness. This is a triple t hreat. The wafers used here are those discs comprising two very thin biscuits, sandwiched together with an impossibly chewy layer of caramel – they’re sometimes sold under their Dutch name: stroopwafel.
