THE SETTING The school was founded in 2008 by chef and food writer Tine Roche, who converted a former stonemason’s workshop into a cookery school and bistro-café. It’s a clean and calming space in a quiet courtyard setting, with streams of natural light pouring through big glass windows.

The school, which is 1½ miles (a 30- minute walk) south of the city centre, runs courses for beginners and advanced cooks, children and teenagers (the residential Cooking for Uni courses are very popular). It also holds monthly wine tastings and runs culinary trips to Italy and Sweden.

THE WORKSTATION It’s hard to believe such a wealth of culinary delights takes place at this unassuming location. The ultramodern teaching kitchen is spacious and equipped with every gadget you could possibly want or need. There are six large independent work stations with extra surface space around the edge of the room. Some of the time our class of eight worked as a group around two of the stations, at other times we worked on our own.
